Ingredientes:

2 placas de massa folhada rectangular
250 g mascarpone
200 ml natas frescas
150 g amoras
200 g lemoncurd (podem usar de compra)

Preparação:

Aqueça o forno a 180ºc

Retire metade do creme e reserve.

Ingredients:
2  puff pastry  pre-rolled rectangles
250 g mascarpone
400 ml double cream
50 g icing sugar, plus 1 tsp extra for dusting
Seeds of 1 pomegranate
150g  raspberries
200 g lemon curd (homemade or shop-bought)

Preparation:

Heat the oven to 180º c

Cut the pastry with the measures of your serving plate.
Put both pastry sheets on a baking tray lined with parchment. Cover with a second sheet of parchment, and top with another tray large enough to cover the pastry, so it want grow. Bake for 20 minutes.
Remove the weight, top tray and top sheet of parchment, and return the pastry to the oven until cooked and nicely golden-brown.
Leave to cool.

Put the mascarpone, cream, and icing sugar in a food mixer and whisk on a medium-high speed for a minute, until smooth.
Spoon half the cream mix into a bowl, and gently stir in two-thirds of the pomegranate seeds and the raspberries (leave some for the topping).
Spread this over one of the pastry rectangles right up to the edges, and transfer to a large, flat plate.
Lay the second pastry sheet on top, and spread lemon curd evenly over that, again, taking it all the way to the edges. Spread with the remaining cream - the curd should start to run down the sides, which is fine.

To serve, sprinkle the remaining pomegranate seeds over the cake and sprinkle with icing sugar.
